From Matthews Cotswold Flour — a long-established, family-run mill in Shipton-under-Wychwood. An Italian-style 00 flour, ideal for all types of pizza bases and especially pasta. Made from hard wheats with a protein level slightly lower than standard bread flour, giving a smooth, flavoursome dough. Protein around 11.5%. For extensible dough, prioritise good hydration and rest; a short autolyse makes shaping noticeably easier.
